CASHEW - Fruit of a pereneous Brazilian tree, with its production almost totally concentrated in the Northeast, where it is rather appreciated and used in the production of juice, liqueurs and preserves. Actually, the fruit is what is called cashew nut. The yellow-reddish, pear-shaped kernel is called peduncle, or pseudo-fruit. Its nut contains a highly energetic almond, with around 20% protein and 5% carbohydrate. The peduncle is rich in vitamin C.
