GASTRONOMIA: CULTURA CULINARIA - FEIJOADA
A feijoada está diretamente ligada à presença do negro em terras brasileiras. Resultado da fusão de costumes alimentares europeus e a criatividade do escravo africano, a feijoada é o simbolo da culinária nacional.
Esta fusão teve origem na época do descobrimento do ouro na Capitania de São Vicente/SP, na virada do século XVII. 0 inicio da mineração no Brasil levou à criação de novas capitanias e modificou sensivelmente a economia brasileira. A partir dai incentivou-se o uso da moeda nas trocas comerciais, antes baseadas em produtos como o cacau e o algodão e fez crescer a necessidade de mão-de obra escrava, intensificando o tráfico de negros africanos e, como conseqüência, sua influência em nossos hábitos alimentares.
Nas regiões das minas de ouro (Minas Gerais, Goiás, Tocantins e Mato Grosso), como o escravo ficava totalmente absorvido pela busca do ouro e dos diamantes, e sem disponibilidade para cuidar de sua própria comida, os mantimentos vinham de outras regiões (litoral paulista e carioca) carregados nos lombos dos animais, dai a origem do não menos famoso 'Feijão tropeiro', indicando a forte apreciação nacional pelos pratos feitos à base de feijão.
Naquela época, a refeição dos escravos de Diamantina era composta basicamente de fubá de milho, feijão e sal. Assim, o feijão misturado corn farinha de mandioca ou fubá grosso de milho, antes de ser servido, virou prato tradicional naquela época.
Pouco depois, acrescentou-se a este prato a carne, fundindo o apreciado cozido português, prato corn diversos tipos de carne e legumes, cozidos todos juntos, com o já adotado feijão, toucinho e farinha. Estava feita a feijoada.
Hoje, à feijoada, constituida de feijão preto cozido sobretudo com partes do porco (orelhas, rabo, pés etc.) acrescenta-se como acompanhamento a couve refogada corn alho, o arroz branco, a farofa de farinha de mandioca e o molho de pimenta.

"Feijoada" is directly connected to the presence of black people in Brazilian land. As a result of a fusion European-feeding habits with the creativity of African slaves, it has become a symbol of our national culinary.
This process started by the time of gold findings in the São Vicente "Capitania" (an administrative division) by the turn of the XVII century. The beginning of mining activities in Brazil led to the creation of new "capitanias" and thus changed drastically Brazilian economy. Since then, the use of currency in trade, instead of the previously used produce such as cocoa and cotton, boosted the need for slave labor force, consequently increasing African black traffic and, therefore, its influence in our feeding habits.
In the gold mining area (States of Minas Gerais, Goiás, Tocantins and Mato Grosso), since slaves were all hired in the search of gold and diamonds, having no chance to care for their own food, provisions used to come from other areas (São Paulo and Rio de Janeiro state coast) on beasts of burden in troops. That is the origin of the also popular 'Feijão tropeiro" (a meal improvised by muleteers on their journeys), which adds to this strong national preference for dishes based on beans.
At that time, in Diamantina, slaves' food used to be basically made up of maize flour, beans and salt. So, beans with manioc flour or coarse maiza flour, mixed before serving, turned into a traditional disk back then.
Shortly afterwards, meat was added to this dish, along with the admired Portuguese stew, which included assorted meats and vegetables, boiled all together, with the previously used beans, lard and flour. "Feijoada" was then created.
At present, this traditional Brazilian dish consists of black beans boiled with some pork (ear, tail, feet, etc.) with side orders of green kale fried with oil and garlic, white rice, manioc flour and pepper sauce.
